Get Your Freekeh On!

freekeh1Recently, I was looking for alternatives to add to my weekly mix of quinoa, barley, and brown rice as my staple for meals.  I was so happy to be asked to try out freekah from Freekah Foods.  Being a new triathlete, I am always looking for a food that is a great source of protein, fiber, and carbs to fuel my workouts!

Freekeh is a non-gmo verified grain with a mild, nutty taste.  It is low sodium, has 6 grams of protein, potassium rich, and 26-28 grams of carbohydrates.  SCORE!

According to Freekeh-Foods, freekeh was discovered by accident over 2000 years ago when a crop of young, green wheat was set ablaze.  Most farmers would sulk over their misfortune, but they rubbed off the chaff, cooked it up and “Eureka” freeheh was created!

I tried the Tamari and made a delicious recipe that allowed me to eat dinner that night, plus prep for a few more lunch and dinners for the remaining part of the week.  I cooked the freekeh according to the package, then I added steamed squash, zucchini, sweet potatoes, and cherry tomatoes then topped with walnuts, garbanzo beans and feta cheese.  SO GOOD!

I plan on using the original flavor for a breakfast treat and add bananas, oranges, walnuts, and honey!  DOUBLE YUM!
